1 cup (125g) cake flour (or all-purpose flour)

1 cup (200g) white sugar (you can also do ½ white, ½ brown sugar for a richer taste)

1 cup (100g) desiccated coconut

125g (about ½ cup) butter

2 tablespoons golden syrup (or honey if you don’t have)

1 teaspoon baking soda

2 tablespoons milk (or water)

🧑‍🍳 Instructions: 1️⃣ Preheat oven to 180°C (350°F). 2️⃣ In a large bowl, mix: oats, flour, sugar & coconut. 3️⃣ In a pot, melt butter & golden syrup together over low heat. 4️⃣ Mix baking soda with milk, then add to the melted butter mixture it will foam up! 5️⃣ Pour the foamy mixture over the dry ingredients and mix well until combined. 6️⃣ Press the mixture evenly into a greased baking tray (about 20x20cm or similar). Flatten well. 7️⃣ Bake for 20 to 25 minutes, until golden brown. 8️⃣ While still warm, cut into squares or rectangles. Let them cool completely in the pan before removing.
